These initially started as an experiment with leftovers. My girls' loved them so much that they've become a freezer staple.
Ingredients
- Salmon fillet (or any other fish you like), cooked and flaked
- 1 big potato, boiled
- Quarter tsp of mustard powder
- 1 egg
- Large handful of grated cheese
- Any veg you like (Frozen mixed veg (carrots, broccoli and cauliflower), spinach, peas etc.,) cooked
- Handful of breadcrumbs or Matzo meal
Method
Mash the potatoes and veg together. Mix in all other ingredients until combined. If the mixture is a little wet, add more breadcrumbs until its mouldable. Mould into golfball sized balls.
